I have mentioned on many occasions that I’ve been participating in Slimming World. While there was an initial hiccup during Christmastime, it seems as if everything has settled back down again since. Overall I find Slimming World fairly simple to follow; my one regret though is baking; although you can syn all your sweet treats it just doesn’t sit so well when following a weight management programme!
One of the recent magazines I received included a recipe for gingerbread stars which I never got around to making. So instead, as an early Valentine’s Day treat I thought I would create some gingerbread hearts (only 1.5 Syns each biscuit).
Ingredients List for Gingerbread Biscuits: 200g plain flour umplut 4 teaspoons of ground ginger; 1/4 teaspoon each of ground cloves and ground fennel; 1 level teaspoon of cinnamon umplut 60 grams low fat spread with four level tablespoons of sweetener plus two small eggs umplut with one level tablespoon of icing sugar for this recipe; it will yield 1.5 Syns. To Make 1.5 Syn Gingerbread Biscuits:
Mix together plain flour, spices and bicarbonate of soda in a bowl; as I could not locate ground fennel anywhere I left this out of the recipe.
Rub the low fat spread to create fine breadcrumbs, then sprinkle in some sweetener for flavoring.
Beat the eggs until smooth before adding to the dry mixture and mixing together to form a dough. Knead until you achieve an ideal smooth dough ball.
Roll out your dough and cut shapes that you desire, such as hearts or other shapes. I used a skewer to punch holes at the top of each biscuit so they can hang.
Bake on an unlined baking tray at 180degC for 10-15 minutes until golden-brown in color, remove and allow to cool before dusting with additional icing sugar, if desired.
My gingerbread hearts turned out rather chunky due to my over-indulgence with bicarb soda! Even without ground fennel, they still possess an irresistibly strong smell and flavor but lack some crunch that comes from traditional gingerbread biscuits – and all for only 1.5 Syns per biscuit! They make an excellent low-Syn alternative treat!
