As we celebrate St Patrick’s Day soon, I have been brainstorming ways to celebrate at home and have come up with these delicious St Patrick’s Day Brownie Bites as an easy, quick bake. A store bought packet mix makes these easy-peasy. Use mini muffin trays or brownie trays and cut into bite-size pieces before serving! Also don’t forget our other St Patrick’s Day crafts for kids and adults to create!
Ingredients to Create St. Patrick’s Day Brownie Bites:
1 (18.3-ounce) box of brownie mix or your preferred brownies recipe will suffice.
Assemble St Patrick’s Day Brownie Bites by preheating your oven to 350 degrees, prepping a mini muffin pan with cupcake liners and spraying non-stick cooking spray before preparing in an 8×8 baking sheet.
Use a small scoop to distribute approximately one tablespoon of batter into each mini muffin cup. Bake for 10-12 minutes, until a toothpick inserted in the centre comes out with moist crumbs attached.
Melt candy melts according to package directions. If the candy overheats or is too thick, add one teaspoon of coconut oil or vegetable shortening as an additive.
Pour the melted candy into a zip-tip freezer bag and snip one corner before drizzle onto brownie bites. Sprinkle immediately with colored sugar before pressing one wrapped Rolo candy into each brownie and placing one Airhead Extreme Mini candy next to it.
Allow the St Patrick’s Day Brownie Bites to completely set before packaging or serving them.
