Gingerbread Rocky Road was on my to-do list for some time, so with things finally slowing down for Christmas I finally made it happen. Rocky Road is one of my favorite desserts; it contains marshmallows, chocolate and nuts all mixed into one tasty cake-like treat! For my recipe I adapted Nigella Lawson’s Christmas Rocky Road recipe as my base.
Ingredients needed for Gingerbread Rocky Road: 250 grams dark chocolate, 150 grams milk chocolate and 175 grams soft butter; plus 4 tablespoons of golden syrup
200 grams broken gingerbread house from Flying Tiger kit
Brazil Nuts (150 Grams) and Red Glace Cherries (150 grams each).
Mini Marshmallows weigh 125 grams each.
1 tablespoon icing sugar To create Gingerbread Rocky Road, chop or break the chocolate into small pieces before combining with butter and syrup for melting.
While making gingerbread rocky road, I used a pre-made gingerbread house kit from Flying Tiger that tasted absolutely incredible. After placing about 3/4 of the pieces into a bag and smashing with a rolling pin until I had an even mixture of biscuit crumbs and small pieces, I then created my delicious treat!
Once brazil nuts have been shelled, add them to a bag and use a rolling pin to crush.
Remove from heat, add gingerbread biscuits, brazil nuts and cherries; then gently mix in mini marshmallows and mini chocolate chips until everything has been covered by the melted chocolate.
Fill a foil tray, using small ones if possible; I split my mixture between five small foil trays I found and added some mini Gingerbread men biscuits as well. Place in the fridge for approximately one hour, until everything has set before removing from foil trays and cutting into small chunks with scissors before dusting with some icing sugar for garnish.
This gift makes an attractive Christmas present or lunchbox treat!
