Recently we’ve been baking more frequently. Everyone in my family enjoys gingerbread baking and I particularly enjoyed making some chewy gingerbread molasses cookies; these make the ideal snack after taking an invigorating walk together with the family.
How to make Chewy Gingerbread Molasses Cookies
In a standing mixer, cream together butter and sugar until light and fluffy. Add egg and molasses; continue beating until combined well.
Utilize a small ice cream scooper to take small portions of gingerbread molasses dough and roll it into balls before rolling each one in sugar mix.
Place one cookie dough ball onto the baking sheet, repeat this step for each additional cookie dough ball, and gently flatten each with your palm heel to flatten them out.
